PANNEKOEK
4 eiers
4 koppies water (ek gebruik soms 5 as die beslag te dik is)
¼ koppie asyn
1 koppie olie (ek gebruik 3/4 koppie olie)
4 koppies koekmeel
2 teelepels sout
4 teelepels bakpoeier
Plaas eers al die nat bestanddele in ‘n mengbak. Klits goed. Voeg dan die droë bestanddele by in die volgorde soos aangedui. Klits goed deur en laat staan vir ongeveer ‘n uur of langer. Kan selfs oornag in toe houer in yskas laat staan. Ek maak dit soms aan en gebruik dadelik. Altyd ‘n sukses. ‘n Teflon pan werk die beste. Het al gevind die pannekoek sit vas in ander panne. Begin bak op hoë hitte, maar soos die pan lekker warm word en die pannekoeke kom mooi uit, kan die plaat bietjie laer gedraai word. Ons het al op gas stowe en elektriese plate gebak.

SANDWICH SPREAD – TROEBROODJIESMEER
3 wortels
1 groot ui
1 groot komkommer
1 rooi soetrissie
1 geel soetrissie
1 groen soetrissie
Bruin asyn (genoeg om die groentemengsel te bedek)
Mayonnaise na smaak (maak die mengsel net lekker nat met dit)
Verwerk al hierdie groente in ‘n voedselverwerker tot lekker fyn.
Giet bruin asyn oor die groente tot bo oor en laat staan oornag.
Volgende oggend dreineer die asyn af en skep lepelsvol groente in ‘n skoon doek, druk groente droog tot daar geen vloeistof meer uitkom.
Sprinkel sout en peper na smaak en ook so 4 eetlepels suiker.
Voeg laastens die mayonnaise by en meng goed.
Bottel nou in gesteriliseerde flesse en bewaar in yskas.

RYK SJOKOLADEKOEK
Sjokoladekoek – Ryk en romerig
My vriendin Salomé het eendag hierdie koek by die werk geëet en die resep in die hande gekry. Dit is ‘n maklike koek wat nie baie skottelgoed maak nie en in ‘n plat bak gebak word – nie koekpanne en versiersel en wat nog nie.
Smelt saam en laat effens afkoel:
220 g botter
½ koppie kakao
1 teelepel koffiepoeier
1 koppie kookwater
Klits saam
2 eiers
1 ½ kop suiker
Voeg die kakao en kookwatermengsel by die eiers.

Meng by:
1 ¾ koppies bruismeel
½ koppie room
2 teelepel vanilla
Sit die deeg in ‘n gesmeerde bakskottel en bak vir 30 minute teen 170˚C. Toets met ‘n “tweetandvurk” – as die koek gaar is kom die vurk mooi skoon uit.  Druk die koek vol gaatjies en giet die bolaag oor.
Bolaag:
3 x 58 g bar-ones
½ koppie room
1 teelepel botter
Giet die bolaag oor die warm koek waarin gate geprik is.

CARROT SALAD


CARROT SALAD
1 teaspoon gelatin
1 cup fine carrots
1 tin cruched Pineapple
1 packet Lemon or Pineapple Jelly
2 tablespoons mayonnaise
250 ml fresh Cream
1/2 half cup caster sugar or 1/3 third cup sugar

Separate Pineapple from juice. juice should yield 1 cup if not , add water to make a cup. Boil Jelly and gelatin and juice cool and beat until thick and creamy. Add sugar little at a time. Mix pineapple and carrots , Fold into juice of carrots and Pineapple. Beat cream , fold into carrots and last the mayo. Pour into mould and put into fridge to set.
It is not the cheapest but a real winner.

CREAM OF ANYTHING SOUP


CREAM OF ANYTHING SOUP
2 cups dry milk NOT Cremora or the likes
3/4 cup cornstarch
1/4 cup granulated chicken bouillon
1 teaspoon onion powder
1/2 teaspoon dry thyme
1/2 teaspoon dry basil
1/4 teaspoon pepper
Whisk until well mixed. Store. In airtight container.
To use
Add 1/3 cup mixture to 1 1/4 ups water, whisk together and cook until thickened.
This equals 1 can of cream soup. Add dehydrated veg of choice”

Roast white onions in the oven,  cut in chuncks sprinkle salt and dry herbs over..
Put in the blender, sieve through and mix it in your flour roux ..like you will make a white sauce ..taste much better then store-bought one’s ..add some white pepper to your taste…

FRIDGE MILKTART
Very easy and I’ve adjusted it over the years. To eliminate lumps, you can beat very well with electric beaters or handheld stick blender.
1600 ml fullcream milk
4 large eggs
250 ml sugar
100 ml cake flour
100 ml maizena
1 ml salt
30 ml butter
10 ml vanilla
200 gram packet tennis
biscuits
fine cinnamon
Spray and Cook dish. Line with whole biscuits. Crumble rest over. Boil milk and butter in micro on high. Beat eggs,vanilla & sugar well. Beat in flour, maizena and salt. Mix well. Gradually mix in hot milk. Return to micro and boil on high till very thick. Remember to stir every few minutes. See my notes above. Pour gently over biscuits. Refrigerate and sift fine cinnamon over when cold.
Topping (optional)
Don’t sprinkle cinnamon over, if you are using topping.
385 gram Tin condensed
milk
125 ml fresh lemon
juice
Beat together till thick & spread over cooled milk tart.

Meng saam:
2 koppies koekmeel

Knypie sout
Meng die volgende saam met melk tot by 300ml.
100 ml olie
1 eier
Vou die nat- by die droë bestanddele in, moet nie te veel meng nie daar kan nog droë klonte wees
Bak by 200ºC tot goudbruin

HAKE IN THE OVEN


HAKE IN THE OVEN
1.3 kg Hake
Mediterranean roasts seasoning rub
Crushed garlic spice
Chives spice
Pinch of Dill spice
Ground Black pepper
Parsley spice
Smoked Chilli flakes spice
Drizzle olive oil
Lemons
Lemon juice

Line baking pan with aluminium foil.
Cut lemons in slices and put on bottom of pan.
Sprinkle Mediterranean spice on skin and put fish skin down on lemon slices, also rub in Mediterranean spice on front side of fish with all other spices mentioned above.
Drizzle a little olive oil and lemon juice over.
Cover pan with foil and bake at 180°C for 30 min. or until fish is cooked.
Take of top foil from pan and grill fish for few minutes until browned.
Dish upwith your choice of sides

ADRIAN’S FISH IN THE WEBER

Had one garlic with cheese and chives Angel fish on the coles last night in celebration of the Boks’ victory, as well as a sweet and sour, chilli Angel fish.
Melt some butter.
Put garlic in.
Some fish spice plus lemon and herb spices on the fish.
Add any fresh natural herbs you have(plus chives on the cheese and chives flavoured fish.
Some lemon juice.
Mix that all in the butter and coat the fish with it inside and out. I prefer to add grated cheese as an extra.
Add jam and lemon juice in the marinade for the sweet and sour fish.
Add some lemon and orange slices for decoration and flavour on both .
Add white cheese sauce on the cheese and chives flavoured fish.

Also had some Pangasius on the coles in my Weber recently. One was sweet and chilli, the other was mild with garlic and lemon flavours.

Add jam and Wellington’s sweet chilli sauce on the sweet and chilli fish.
Close the fish with your dome if you’re gonna braai in a Weber so that the heat stays inside and the fish can cook evenly.
