CHICKEN LIVER PATÉ WITH PORT WINE AND PISTACHIOS

This is the snack on top of the crackers or biscuits and a glass of wine, open a can of smoked mussels, don’t forget the Camembert or Brie cheese and cut open some delicious ripe figs…and whalaa…you have your own snack platter combo! Cheers!
Ingredients for the Liver Pate:
100 ml dry white wine (just under 1/2 cup)
100 ml brandy (or cognac or whisky, just under 1/2 cup)
100 ml port wine, good quality (just under 1/2 cup)
1 small onion, finely chopped
3 garlic cloves, peeled, crushed, chopped
2 tablespoons fresh thyme
500 g chicken livers
4 -6 tablespoons butter (Baking butter)
1⁄2 teaspoon salt (coarse salt or flaky sea salt)
1 teaspoon pepper, black, coarse
100 g pistachio nuts, finely chopped
DIRECTIONS:
Put the white wine, brandy and HALF of the port (50 ml) in a small pot with the onion, garlic and thyme. (No need to taste it as you add…finish the recipe first…hahaha!)
Simmer until reduced to 1/2 of original volume (It can be hard to judge this, especially with the onion bits in it. Just tilt the pot, and take a guess!).
During that time, melt the butter in a frying pan…You need enough butter so you have sauce left in the pan when the livers are done.
Add and fry the cleaned chicken livers over fairly high heat in the butter, until they are just pink on the inside. Do not overcook…cut a few open to see degree of done, fry for about 10 minutes, and stir often.
Put the chicken livers in a processor / blender with ALL of the butter sauce left in the pan, and then add the boiled down liquor.
Add the salt and pepper and Whizz the livers. Add the other half of the port and whizz until you have a quite soft spread, too soft to use at this stage. (It will firm up in the fridge).
The 50 ml should be enough to make the liver spread reach an almost runny consistency, but if not, add more. (Add to the mix…not drink as you go, okay?) Taste your mix to your preference of salt consistency, add more accordingly.
When the liver spread is velvety smooth, scrape out into a bowl, and mix in the nuts. Cover with plastic wrap, cool, and then leave in fridge to firm up, overnight.
The spread develops great flavour over the next day. Can be kept and used for up to a week.
PS: You may double up on the ingredients if you’re a liver pate lover like me…always good to cook your own, then you know what’s in it..yes? And believe me….you can never have enough pate…so calculate to satisfy your mood.

3 kp boontjies
1 1/2 kp koekmeel
10 ml bakpoeier
5 ml kerrie
5 ml sout
Knypie peper
2 eiers, geklits
5 ml gerasperde ui

Kook boontjies in bietjie water tot sag. Dreineer goed en laat afkoel.
Sif koekmeel, bakpoeier, sout en peper saam. Voeg by boontjies en meng. Voeg eiers en ui by en meng tot deeg. Voeg bietjie water by as deeg te styf is.
Skep lepels vol in muffinpannetjies. Stooi bietjie kaas oor. Bak vir ongeveer 15-20 min teen 180 grade C.

4E suiker

Sif sout, meel en bakpoeier saam. Klits eiers in melk. Meng alles. Skep dessertlepels vil in gespuite muffinpannetjies. Bak teen 180 grade C vir ongeveer 20min.

500 gr meel
500 gr strooisuiker
1 teelepel sout
4 teelepels bakpoeier
7 eiers geskei
2 koppies olie
1 koppie water
4 teelepels vanilla
250 gr maaskaas
750 gr icing sugar

Sif 6x saam meel, strooisuiker, sout en bakpoeier. Skei eiers.
Meng in meelmengsel olie, water en vanilla. Klits eierwit styf. Vou in meelmengsel.
Deel in kolwyntjie panne en bak by 180 grade C tot gaar, ongeveer 12 min.
Kan koek of cupcakes wees.
Icing kan wees maaskaas met icing gemeng, of karamel met peppermint crisp… waarvoor jy ook al lus is. Kan kakoa en koffie bysit, maar maak dan eiers en olie en water meer v koffie Of chocolate cakes

2 eetlepels suiker
1 teelepel fyn kaneel
125 g margarien gesmelt

Maak beskuitjies, suiker en kaneel fyn in voedselverwerker.
Meng met gesmelte margarien.
Druk in terbord/bak vas met ‘n teelepel.
Bak vir 10 minute teen 180ºC (opsioneel).

BRAAI STOKBROODJIES
500 ml flour
10 g dry yeast
5 ml salt
5 ml sugar
45 ml oil
500 ml warm water
100 g grated Gouda cheese

Place flour, yeast, salt, sugar, cheese and oil into a mixing bowl and mix till combined. Then slowly add the warm water a little at a time until the mixture forms a dough. Place into a lightly oiled bowel and cover with cling wrap and leave for 1 hour to rise.
Take out the dough and cut into 10 even pieces, roll into sausage forms and wrap gently around skewer or stick. Place onto medium heat coals until brown/toasted. Serve and eat.

Bestandele:
500 g broodmeel
10g pakkie droeë gis
15 g growwe seesout
320ml water. (Kraantemperatuur)
Een lekker glug virgin olyfolie
Metode:

Meng al die bestandele saam en knie vir omtrent 10 minute. Tot n mooi gladde deeg.
Laat rys in n bak bedek met kleefplastiek.. vir omtrent 45minute tot n uur.
Vou die deeg vir omtrent 5 minute en vorm die brood.. laat rys op bakpapier..
Ek sit dan my oond aan.. en die tyd wat die oond neem om warm te word rys die brood weer. Oond temp 240 C.
Net voor jy die brood laai gee dit 2 of 3 vlak snitte bo-op.. ekt vandag olyfolie en growwe sout opgesit. Jy kan ook net bietjie meel opsif
Wanneer die oond reg is kan jy n bakplaat gebruik om op te bak maar laat die bakplaat saam warm word.. dan “spring” jou brood beter.
Sodra jy jou brood in die oond laai gooi omtrent 100ml water in n bak onder in die oond om stoom te maak.. dit maak dat die brood mooier uitrys.
Bak teen 240C vir die eerste 10 minute en draai dan af na 220.. vir nog 20 minute.. klop die bodem om te toets of dit gaar is

HOMEMADE MARSHMALLOW FLUFF
Marshmallow fluff is a spreadable marshmallow cream that closely resembles a whipped and sweetened cloud!
3 large egg whites
2/3 cup plus 2 tablespoons sugar
¾ cup light corn syrup or golden syrup
1 teaspoon pure vanilla extract

Yield: About 5 cups

Beat egg whites together until light and frothy using an electric stand mixer with the whisk attachment. With the mixer running, slowly pour in 2 tablespoons sugar; beat until soft peaks form.
In a large saucepan, combine 1/3 cup water, corn syrup, and remaining 2/3 cup sugar. Place over medium heat and cook until boiling. Start cooking over medium heat stirring occasionally but never taking your eyes off it. Raise heat to medium high and continue cooking until mixture reaches the soft-ball stage, about 240 ºF on a candy thermometer, it will take about 10-15 minutes. (The hot syrup may bubble up the sides, turn heat down briefly or remove pan from heat, once the syrup goes back down raise heat and continue cooking.)
Drape an old, clean kitchen towel over the front and side of the mixer, leaving one side open to pour in the syrup. With the mixer on low, slowly add hot syrup to egg-white mixture ( make sure kids and pets are not nearby, this could scar you for life, people(!) and scares the living daylights out of me!). Increase mixer speed to high and continue beating for 6-8 minutes. Add vanilla and continue to beat until mixture looks like marshmallow cream, 2-4 minutes more.
Allow to cool, spoon and store in tightly sealed jars in the refrigerator up to a month.

Ek pipe nooit die koeke nie. Ek is nie baie kunstig nie, maar ek het van die fluff al 2 maande in die yskas gehou dan was hy nog net so styf soos toe ek dit gemaak het.

Jy het nie n baie groot stuk wors nodig nie.
Jy het nodig:
Wors
n Paar geskilde, dun skyfies gesny aartappels
Koppie rou tastic rys
Groot ui, knoffel na smaak
Red pepper
Yellow pepper(albei opsioneel maar dit gee n heerlike smaak)
Pakkie chillie beef soppoeier aangemaak met ongeveer 750ml koue water
Sout en peper
Oond op 180 grade C (Nb. Voorverhit)

Pak n laag of twee aartappel skywe onder in n oondvaste bespuite oondskottel/bak.
Haal die wors in klein bolletjies(soos klein frikkadelletjies) uit die derm en pak rond op die aartappels.
Gooi koppie rou rys weer lekker oor dit.
Braai ui, peppers en knoffel in bietjie olie tot glaserig en skep dit bo-op die rou rys in die skottel.
Giet nou jou aangemaakte sop bo-oor alles.
Sit deksel of foelie op en bak stadig vir ongeveer 1 en n half uur tot 1 uur 45 min.
Heerlik met n mengel of beetslaai en selfs cocktail rolls daarby. Jy kan ook soetwotels/soet ertjies saam gee. Maar lekker op sy eie en heerlik die volgende dag. Hou aartappelskyfies dun.

PORK SHANK WITH LIME PICKLES

Lime Pickles

Wash limes and cut into rounds. Sprinkle with coarse salt, and leave overnight. Next morning rub the salt of and cut each round in half. Put the slices into sterilised bottles and sprinkle with “pickling masala” as much as you like. Cover with oil and seal. Should be ready within 2-3 weeks.

Pork Shank

Take one smoked pork shank and remove the skin. Bake for 40 minutes at 180ºC. Baste with mustard before serving.
