NOUGAT VAN GOUESTROOP
In dikboom kastrol:
250 ml suiker
125 ml koue water
en 100 ml goue stroop

Kook saam tot mengsel ‘n stywe balletjie vorm as bietjie van mengsel in koue water gegooi word, of as jy ‘n termometer gebruik, kook tot 120°C.
Haal van stoof af en klits 3 eierwitte styf, in aparte skoon glasbak, nie droog nie.
Gooi stroop-vloeistof stadig by eierwitte terwyl jy aanhoudend klits.
Kook nog hoeveelheid stroop van dieselfde hoeveelheid bestanddele tot stywe balletjie vorm en gooi weer stadig by eierwit mengsel terwyl jy aanhoudend klits.

(Jy kan die mengsel een keer kook, en in 2 deel, maar maak die 2de helfte eers weer warm voor jy dit bygooi, die mengsel moet warm wees wanneer mens dit bygooi)
Voeg nou 2 teelepels vanilla geursel by asook 375 ml gekapte neute van jou keuse en 125 ml glanskersies of gekapte droë appelkose.
Skep mengsel in goed gesmeerde plat bak en maak gelyk met ‘n mes. Laat stol vir 1-2 dae en sny in blokkies.
Jy kan ook ‘n vel ryspapier onder-in bak sit en mengsel bo-oor gooi en bedek met ryspapier. Sny deur papier in blokkies.

BRAAI PIES

BRAAI PIES
Fillings:
Chicken, Pea and Beer Pies:
a handful of mushrooms – sliced
half a leek – sliced
2 or 3 spring onions – chopped
a clove of garlic – crushed
a small handful of cooked leftover chicken
a palm full of fresh garden peas
your favourite beer
a splash of cream

Pan-fry the mushrooms, leeks, onions and garlic and let them sweat off any excess juice.
Take your leftover chicken, tear it up roughly into strips and add it to the pan.
Chuck in the peas and then a splash of beer. Be stingy – think of it as though you’re giving a six-year-old kid a little taster. (Keep the rest for yourself.)
Add a splash of cream and let the sauce cook down.
You want the filling to be juicy but not overly moist otherwise when you braai the pie it’ll disintegrate into a soggy bomb.

Mussel and Prawn Pies:
a handful of mussels
a splash of white wine
8 prawns, cleaned, deveined and shelled
a knob of butter
a clove of garlic – crushed
a splash of cream
coriander – fresh and chopped
2 or 3 spring onions – cut in half and sliced into thin strips

Dump the mussels in a pot, add a splash of white wine, put the lid on and steam until they open up.
Take them out of the shells, remove the beard (if you haven’t already done so) and set aside. Clean your prawns, remove the shells and seal them off in a pan with a knob of butter and the garlic.
Add the mussels to the saucepan with a splash of cream and a little drizzle of the salty water you steamed the mussels in.
Add the coriander.
Mix the whole lot up, chuck in the spring onions and let it simmer until the sauce has cooked off a little.
As with the chicken, pea and beer pies above, the mixture must not be too moist.

Spinach and Feta Pies:
butter
a whole bunch of spinach – rinsed and remove the pith
1 onion – chopped
1 clove of garlic – crushed
a little feta
salt and black pepper to taste

Preheat a pan and add a couple of knobs of butter.
Add your spinach, onion, garlic salt and pepper and stir around till the onion is soft and the spinach cooked.
Spinach and butter are best friends – you can almost never add too much butter.
Remove from the heat, let it cool down, and then crumble some feta over the spinach.

The pastry:
If you don’t have the energy to make your own pastry, just buy some rolls of puff pastry from the store.
Sometimes it’s okay to take a shortcut.
One sheet of pastry will make three pies.
Whatever you do, try and keep the puff pastry as cold as possible. Roll it out and cut it into six even-sized squares.
Scoop a biggish spoonful of whichever filling you’ve made on to the centre of one square.
Cover with another square and push the sides together using your fingers or the tines of a fork, ensuring that it’s completely sealed up.
Repeat with the remaining squares of pastry.
Brush the pastry with a little egg white, and using the tip of a knife, cut three small incisions on top of each pie – this will stop the pies from exploding when they’re on the grid.
Put your pies in the fridge so that they harden up a little before you braai them.

Light a fire.
Once the fire is ready with nice medium coals, place your pies inside one of those braai grids that close up (the same one you use for a boerie).
There’s no need to grease the grid – there’s load of butter in puff pastry, which will prevent it from sticking.
Take a couple of bricks and stack them on either side of the fire (about four each side).
Place the grid on top of the bricks and turn the pies often to avoid burning them.
If the pies start spitting at you, best you jump out of the way until they’ve calmed down and if they break open it probably means you weren’t turning them often enough or your mixture was too soggy. (If at first you don’t succeed, you should try, try, and try again.)
When the puff pastry is nice and golden brown, your pies are ready to eat.
The taste of puff pastry cooked over coals is unbelievable and I can’t think of a better way to get that smoky flavour to infuse in a pie. Delicious.

HARI KABAB
1 kg solid beef without fat and bone cut into thin slices
1 cup onion thin slices
½ cup cooking oil
1 tablespoon onion paste
1 tablespoon garlic paste
2 tablespoons papaya paste
1 tablespoon ginger paste
1 tablespoon green chili paste
2 tablespoons onion, cut into thick slices
1 teaspoon turmeric powder
1 teaspoon cumin powder
20-25 ml black pepper
4 green chilies cut one side
1 teaspoon hot spice powder (coriander, cinnamon, and cloves)
1 teaspoon sugar
1 tablespoon Salt

Cut the beef slices into thin slice. Mix beef slices with papaya paste and all other spices, except sugar and onion slices.
Heat oil in the cooking pan. Put onion thin slices in to the oil and stir for evenly frying. Before onion start getting brown put the onion to the meat with hot oil.
Keep it for 8-10 hrs for marinating. It is suggested to keep in the refrigerator during hot season.
After marinating, heat the pan and cook all marinated beef on medium heat. Cover with a lid until water comes out of the beef. Add green chilies and onion thick slices.
After water dry up take hari kabab out of the pan and serve with fried or plain rice.

SIMPLE SAVOURY TART

SIMPLE SAVOURY TART
Tart filling:
Table spoon of olive oil
2 medium white onions
450 g rosa tomatoes
350 g mushrooms (I used portebellini but any will do)
half teaspoon of each of these (dry herbs: mixed herbs & sweet basil, cracked black pepper and salt)
Other:
400 g ready to use puff pastry (thawed)
Olive Oil Spray and Cook
100 g mozzarella cheese
180 g boerenkaas cheese

Braise onions in olive oil until golden brown add rosa tomatoes for 5 minutes until skin crack, but keep shape of tomatoes. Add dry herbs, salt and pepper and stir in with onions and tomatoes then add mushrooms for 5 minutes. Set aside to cool.
Roll out the pastry into any shape you desire. I used a round tart ceramic bowl which I lined out with foil. Coat with spray and Cook and line out tart pan out with the pastry.
Grate mozzarella and lay it evenly over the pastry. I like this because it adds extra flavour and creates a barrier between pastry and filling.
Evenly lay the tart filling over the mozzarella cheese.
Grate the boerenkaas and arrange over the filling.
Put in a pre-heated oven on 180 degrees C for 20-25 minutes / until visible pastry on the side is golden brown.
Put oven on grill for 2 minutes just to get the cheese on top of tart is golden. I kept this one in for a minute too long but 2 mins should do.

PIETER’S PICKLED PORK BELLY/LEG
3 kg pork belly or leg
Pickle:
¾ cup course salt
4 bay leaves
whole garlic
2 teaspoons black pepper
5  cloves
1 stick of rosemary
1 tablespoon thyme
1 tablespoon cumin seeds
2 tablespoons dried parsley
2 onions, cut in thin slices
2 lemons
1 cup white wine vinegar
1 tablespoon all spice

Stir all ingredients with enough water to cover the meat.
Pickle over night.
Next morning take meat out of pickle, put in roasting pan, cover with foil and roast on 200°C for 1 ½ hour.
Make indirect fire in the Weber, cook for 1 to 2 hours.
Don’t open the lid.
If you can remove the bones from the meat with a slight pull.. the meat is perfect.

SJOKOLADE PLAATKOEK

SJOKOLADE PLAATKOEK
750 ml koekmeel
20 ml bakpoeier
500 ml suiker
5 ml koeksoda
80 ml kakao
knippie sout
500 ml kookwater
250 ml olie
10 ml vanilla
50 ml wit asyn

Voorverhit oond tot 180 ºC en spuit of smeer pan.
Sif al die droë bestanddele saam.
Meng res van die bestanddele saam in beker en giet egalig oor die droë bestanddele.
Klits met ‘n vurk om te meng.
Skep in ‘n voorbereide pan.
Bak 20 – 25 min of tot gaar.
Versier volgens keuse.
Ek het die volgende sousie oorgesit, net
½ koppie water
½ koppie suiker
1 eetlepel kakao
Meng saam  en kookvinnig.
Paar gaatjies in koek gedruk en oorgeskep.

AARTAPPEL EN BILTONG HAPPIES
2 koppies fyn kapokaartappels
80 ml melk
125 g fyn biltong
125 g gerasperde cheddarkaas of kaas van eie keuse
1 eier

Meng al die bestanddele saam en vorm balletjies, bietjie groter as okkerneutballetjies.
Klits  nog ‘n eier en doop die balletjies daarin en dan in broodkrummels. Laat staan vir 20 min in die vrieskas.
Verhit kookolie en braai die balletjies tot goudbruin.

HOME BAKED COCKTAIL ROLLS
1 sachet yeast
1 tsp salt
1 tblsp sugar
4 cups of cake flour
1 egg
1/2 cup of lukewarm milk
1 cup of lukewarm water
50 grams of melted butter

Sift dry ingredients into a bowl.
Whisk the egg into the milk and water and add the butter.
Add liquid mixture to the dry mixture.
Add flour if necessary.
I give it a good kneading, put into into a bowl to rise and leave in a warm place to rise.
Leave to rise for approximately 2 hrs. Knead back.
Roll as desired. Sprinkle with sesame seeds/ couscous.
Bake at 180 degrees C for 20-25 min
Note:  I roll into a gigantic roti/ pizza. Slice 32 slices for mini rolls or 16 for normal size. Thereafter just roll from the outside of each slice to the centre. No need for butter.

PENNY SE SPLITERTJIE EN BOEREWORS SOP
1 pakkie split ertjies
pakkie beesvleis sopbene
1 kg boerewors (ek verkies die wat sê op pak: gegeur met naeltjies, koljander en neutmuskaat)
1 groot ui, opgekap
4 groot wortels, grof gerasper
1 groen en 1 rooi pepper, opgekap
4 groot aartappels, grof gerasper
2 teelepels gekapte knoffel
sout en peper
BBQ spice
Chicken spice
Chakalaka spice en of cayenne pepper vir ekstra byt

In ‘n lekker groot pot kook split ertjies in genoeg water vir ‘n uur of tot sag. Ek meet maar met my oog.
Gooi dan so 2 tot 3 liter water by en voeg dan al die groente en sopbene by.
Geur met spices sout en peper.
Laat kook vir ‘n uur en ‘n half.
In die tussentyd het ek die wors eenkant gaar gemaak en toe in stukkies gesny. Na sop ‘n uur en ‘n half gekook het, het ek die wors by gemeng en nog so ‘n uur laat kook.
Sit so ‘n bietjie maizina met melk aangemaak by die sop ingeroer, net om dit effens dikker te maak.
Stoof afgesit en sop vir nog so ‘n halfuur op stoof laat staan.
Pas maar self die resep aan met die hoeveelheid water en speserye. Ek proe maar. Die wors gee dit ‘n heerlike geur.
Wors en beesvleis bene kan vervang word met 2 pakkies bacon en ‘n pakkie bacon sop bene. Jy kan ook so ‘n hand of 2 vol gesnyde sop seldery byvoeg.

ZELDA’S PAELLA

ZELDA’S PAELLA
Stork margarine
1 pkt bacon
3 large chicken breasts
500 g calamari, diced
1 large onion
1 red pepper
4 cloves garlic, crushed
600 ml rice
1 chilli, chopped
5 ml paprika
200 ml dry white winegenerous pinch saffron, soaked in 5 ml boiling water
1 liter chicken stock, warm
12 whole mussels
4 large tomatoes, skinned and chopped

Heat margarine in large frying pan. When it begins to bubble add bacon onions and peppers and when browned, remove.
Add seafood.
Add the rice, chilli and paprika and stir well.
Increase the heat and add wine, chicken stock and stir well.
Add chicken and bacon and leave to simmer for 10 minutes, stirring occasionally.
Add the mussels and tomatoes and simmer for another 10 minutes.
Reduce heat, add prawns and calamari and heat through.
Season to taste. Enjoy
