SA-EEDAS ROTIS

SA-EEDAS ROTIS
Recipe and photo:  Sa-eeda Daniels
I hope all of this makes sense.
This recipe is slightly adapted from a recipe that appeared in the Boeka Treats Booklet to make it more like my grandmothers.

4 cups flour
1.5 teaspoon salt
¾ cup oil
1.5 cups lukewarm, boiled water
1 teaspoon baking powder
125 g butter / margarine

Mix everything in a bowl to make a nice dough, dust your hands with flour if its sticky.
I knead the dough until it has an elastic texture ± 15 minutes.
I rub it with a little oil and cover with cling wrap and let it rest for about 30 minutes.
I then roll it out, spread half the butter, then roll from the top side down to the bottom to make a long snake.
Then roll the corners in on opposite sides to make an “S” and fold the top half onto the bottom half.
Let it rest for 30 minutes then repeat the process up until the long snake. Then cut the individual balls.
At this point, you can either roll the circles and fry them. But I take it one step further and roll long lengths and make the individual “S~ balls and refrigerate till firm.
I find it rolls better when slightly chilled.
I fry without butter or oil and once done, I “smack” them between my hands to get the fluffiness.

If you look at the photos  the ball was rolled out, smeared with butter, then rolled up to make a long sausage.
Then opposite ends rolled towards the centre. if you look at the “s” shape in this pic, you’ll see the ends were folded in opposite directions. When you have you “S” shape, you take one side and fold it onto the other.
This adds layers to your roti, so you get that flakiness.
The shape (to me) isn’t all that important, as long as it tastes the way it should.

FRENCH TOAST QUICHE

FRENCH TOAST QUICHE
(serves 3-4)
Ingredients:
6 slices of buttered bread
500ml milk
3 eggs
150g grated cheese (cheddar or similar)
salt, pepper
1 stock cube
some ham or bacon, cut into strips
2 tomatoes, sliced
Method:
Preheat the oven to 160 degrees (fan oven).
Butter the bread and place, buttered side down, into an ovenproof dish/casserole.
Mix the eggs with the milk and crumble in the stock cube; pour the mix over the bread.
Top with cheese, then ham or bacon strips and tomato slices.
Bake in the oven on the middle shelf for around 30 – 40 minutes (this depends a little on your oven – just check after half an hour if the egg mix is cooked).
Serve hot with a side salad.
Why not add a little feta cheese and some basil and oregano for a Mediterranean touch? Or leave out the ham/bacon to make it vegetarian? Simply use what you have to hand & love eating .
PS: I made this for one person in a small ovenproof dish, using one slice of thick brown bread, 1 egg, 60ml of milk, a handful of grated cheese, a little seasoning, 1 slice of bacon and 2 cherry tomatoes.

HOW TO USE OSTRICH MEAT

HOW TO USE OSTRICH MEAT
Ostrich meat contains little fat, therefore it does cook differently than beef. Tender cuts should be grilled, broiled or fired. For best taste, the meat should not be cooked more than a medium doneness (60-70°C on a meat thermometer.) A moist heat cooking method is suggested for those that prefer meat that is well done, because of the lack of fat the meat will be dry and tough. Less tender cuts (such as the drum) should be prepared using a moist cooking method such as roasting. Ostrich works very well with recipes that call for cooking meats with vegetables. Most cuts of ostrich will cook in a little less time than a similar size cut of beef, and lesser quantities of spices are needed for the same flavour.

Method Portion Temperature °C °F Time
Bake 115 g 190 375 15 min
Barbeque 115 g  Medium 10 min
Boil 450-900 g High 20 min
Braise 55 g Low 20 min
Broil/Grill 340 g High 10-13 min
Fry 55 g 220 420 2-4 min
Parboil 450-90 g High 5 min
Roast 1.8-2.7 kg 160 325 13-15 min
Sautée 55 g 220 425 15 min per side
Sear 115 g High 30-45 sec
Skewer 25 mm cubes  High 6-8 min
Soup Chunks Simmer 30 min

Microwaving NOT recommended for either cooking or re-heating. It dries the meat out and makes it rather unappealing.
Marinade is a liquid in which the meat is placed to allow absorption of both moisture and flavour. Ostrich is very lean and marinades help to avoid excessive drying. Ostrich meat is very quick to absorb the flavour of a marinade, so don’t overpower the taste of the meat.

GEROOKTE VARKWANG PASTEI

2014-12-03-varkwangpasteitested

GEROOKTE VARKWANG PASTEI
Ongeveer 800g varkwangskywe
1 ui
2 knoffelhuisies
‘n paar takkies van elk: tiemie, roosmaryn, origanum.
sout
drie medium groot aartappels in klein blokkies gesny
3 klein Granny Smith appels in klein blokkies gesny
1 groenrissie in stukkies gesny.
