WARM WATER SPONGE CAKE / CUPCAKES
3 large eggs
280 ml sugar
3 ½ teaspoons baking powder
375 ml flour
3 tablespoons butter
200 ml water
Beat eggs and sugar until white and fluffy.
Fold in the flour and sprinkle the baking powder over the mixture.
Heat the butter and water in a small pot until boiling point and pour over mixture immediately.
Fold the water mixture into the flour mixture until well combined.
Pour the batter into 2 prepared baking tins or into cupcake moulds.
Bake in a preheated oven at 180ºC for 20 min or at 160ºC for fan ovens.
Cupcakes bake for 15 to 18 minutes.
