BRINE CHICKEN

BRINE CHICKEN
With mash, sweet potato and butternut.
3 chicken leg quarters
1/2 cup coarse sea salt
1/2 cup sugar
herbs of your choice (1 teaspoon each of 3 types)
2 ltr water
1 lemon, cut in quarters
1 onion, cut in quarters

Preparing the Chicken.
Boil water and salt, sugar, herbs, and onions. Squeeze lemon into water and add the squeezed lemon quarters to water.
Stir well and boil together for 5 minutes.
Let cool down and soak chicken in it for about 2 hours.
Remove chicken from brine and pat dry.
Season to taste.
Bake in oven for 45 min at 180°C and grill then for 15 min.
Make mash as usual and just use the chicken drippings and sauce for the mash.
Put butternut and sweet potato together in pot and add some sugar, butter, little salt and cinnamon and cook till done.
Veggies are the easy part.
