KRISTIE’S HEARTY BEEF STEW WITH RICE
300g beef shin
1 big onion chopped
3 carrots peeled and chopped
3 potatoes peeled and chopped
1 cup frozen beans
1 cup frozen peas
1 cup frozen corn
2 cups coke
1 cup red wine
30 ml boiled water
salt and pepper to taste
herb and spices to taste
15 ml coconut oil


Method for the Rice:
1 Cup Rice with little salt
Put the rice and salt in a pot and cover with water.
If the water starts to boil, lower the heat and let boil for 15-20 min.
After the rice is soft, drain the water of the rice and set aside.

Method for the hearty beef stew:
In a pan add the coconut oil and the bones and fat from the beef shin.
Fry the bones and fat till brown.
Add the salt and pepper and herbs and spices.
Now add the onion and fry till golden.
Place the bones and fat of the beef shin and onions in the pressure cooker and add the beef shin meat.
Add one cup of red wine and two cups of coke.
Add the carrots and potatoes to the pressure cooker.
Add the peas, beans and corn also to the pressure cooker.
Add the boiling water also to the pressure cooker.
Mix everything roughly and close the lid of the pressure cooker.
Put the pressure cooker on pressure and turn the timer to 28min.
Release the pressure of the pressure cooker after the time is over and remove the pressure cooker lid.
Remove the bones and fat out of the stew.
Serve and enjoy with the rice!
