Adjustment for 5000 feet:
Reduce baking powder: for each teaspoon, decrease 1/8 to 1/4 teaspoon.
Reduce sugar: for each cup, decrease 0 to 2 tablespoons.
Increase liquid: for each cup, add 2 to 4 tablespoons.
Increase oven temperature by 25 degrees F.

You should check the type of flour? Different densities same as UK . Use 00 which is usually the best. Welkom is 4000 ft above sea level and no problem. So 5000 ft should not be a problem.
Go maybe 10 deg lower than recipe recommendation.

Thank you Elize – I will certainly have to shop around. Just don’t know whether or no I need to go to a speciality store to look – maybe organic. Long to be able to use tried and tested without this trial and error! Doesn’t do much for confidence.
