PEANUT BUTTER COOKIES

PEANUT BUTTER COOKIES
250 g butter
500 ml sugar
2 eggs, whisked
125 ml smooth peanut butter
10 ml bicarbonate of soda
5 ml vanilla essence
250 ml milk
500 ml cake flour, sifted
500 ml instant oats
500 ml coconut
500 ml cornflakes
Cream butter and sugar.
Add whisked egg.
Add peanut butter and mix well.
Dissolve bicarbonate of soda in milk. Add vanilla. Add to butter mixture and mix well.
Mix the rest of the ingredients and add to the butter mix. Mix well
Form wall-nut sized balls. Place on a grease baking tray and flatten with a fork.
Bake for 15min at 180 ºC.
Turn out on a cooling rack and let cool before storing.
