FRUIT DREAM (ice cream)

fruit dream kititested

Meant for my recipe group, now translated so my friends can understand. The other night I made Fruity Dream in the Thermomix. Basically frozen fruit (strawberry that night), castor sugar and 1 egg white. Ratio 600g:60g:1 egg white. You can make it in a good food processor, but I don’t have one anymore so cannot test it.

If using normal sugar, process it to castor sugar, then add fruit while motor is running and mix until you have thick sweet fruit mush. Now turn it out into a bowl, add egg white and beat the living daylights out of it with your electrical beater. You have to beat air into it, and work quickly otherwise it will freeze up and seize your beater. Texture is like soft serve when you are done. Of course this is quick and easy in the Thermomix. (have to get a brag in).

Anyway, the story. The strawberries was too sweet so it was not as good as usual. Tonight I was whipping cream and remembered the leftover Fruity Dream. I cut it in chunks, beat it smooth and folded the whipped cream in. O my soul but it is the best ice cream ever, tastes like that fancy shoppies that makes all their own ice creams. Cannot wait for next peach season!
