FENNEL AND APPLE SALAD

I don’t like meat & fruit but love this with a steak.

Use young fennel slice thinly with a mandolin & the apples-I have used the granny smith & Fiji & cripps & all good.

Make dressing with chopped fennel tops , olive oil, apple cider vinegar, salt & pepper.

Variations I’ve tried-add radishes for a bite or blue cheese & pecans/walnuts.
