COCONUT CAKE WITH PINEAPPLE - Food Lovers Recipes

COCONUT CAKE WITH PINEAPPLE
2 c. sugar
2 c. flour
2 eggs
1 tsp. baking soda
1 tsp. vanilla
16 oz. crushed pineapple, undrained
Mix in bowl until blended with spoon.
Pour into greased 13×9 inch cake pan. (use a square baking tin preferrable)
Bake at 350°F 35-40 minutes. ( 180 Grade C) Test and bake longer if needed

Icing:
1/2 c. butter
1 c. sugar
3/4 c. evaporated milk
1 c. coconut
1 c. chopped nuts
1 tsp. vanilla
Mix butter, sugar and evaporated milk together and cook over medium heat until a little thickened.
Remove from heat and add remaining ingredients.
Pour over hot cake.
Eat warm or room temp. Refrigerate leftovers.
