MIXED BERRY SAUCE
MIXED BERRY SAUCE
2 cups berries (I use 1 cup blue and 1 cup blackberries)
½ cup water
¼ cup sugar
1 teaspoon lemon juice
2 teaspoons cornstarch
Mix ½ the berries, ½ water, sugar and lemon juice.
Stir and bring to boil
Turn down heat, simmer 7 to 10 minutes
Mix cornstarch into rest of water until dissolved and add to the berry mix
Stir until thickens, then add the remaining berries
Cook 3 minutes on low.
Bottle and store
You can with ease make larger quantities. I just made the above x 7 and filled 11 x 250ml mason jars.
Source: I pulled the original recipe in 2006 from the Internet, but cannot trace the page anymore. I make this every berry season.
