OUMA LINA SE VRUGTEKOEK
Die koek het my skoonma al die jare vir ons gebak vir kersfees en vir haar seuns se troues.
500 g koekvrugte
1 koppie water
250 g botter
1 koppie suiker
1 teelepel koeksoda
Kook vir 10 minute saam.
Sny 125 g dadels en 125 g kersies by en laat afkoel.
Klits 3 eiers en 2 Eetlepels brandewyn saam.

Sif saam:
2 koppies koekmeel
2 teelepels bakpoeier
1 teelepel mixed spice

Meng alles saam en bak in ‘n ronde 22 cm pan teen 150°C vir 1½ uur.

DREAS CHRISTSTOLLEN
Ingredients for 2 Christmas stollen weighing between 1.3 and 1.5 kg.
This stollen tastes super juicy and should be stored for at least 4 weeks before it is cut.
On the eve: Pour the raisins, citrons, candied orange peel and almonds with the rum and cover. Let stand overnight.

2 vanilla pods
1 kg of flour + 200g of flour
100 g fresh yeast
100 g sugar
grated peel of an untreated lemon
400 ml lukewarm milk
1 teaspoon salt
400 g soft butter + 150 g to brush
100 g chopped almonds
80 g of lemon zest, diced
80 g of orange zest, diced
460 g raisins
60 ml of rum
200 g powdered sugar
2 eggs
1.5 sachets of Christstollen spice
baking paper
cling film and aluminum foil to pack

Put 1 kgg of flour in a mixing bowl, make a bowl in the middle and crumble in the yeast. Heat the milk and pour over it. Dissolve yeast and cover with flour. Put the kitchen towel on the mixing bowl and the yeast mixture for 20 minutes in a warm place.
Meanwhile, cut the vanilla pod lengthwise and scratch out the pith with the flat back of the knife. Rub off the lemon peel.
200g flour with 400g butter as soft as possible butter knead.
When the yeast approach has gone, knead the sugar, vanilla, lemon peel, eggs and salt and seasoning. It must be a firm dough. Cover again and let it rest for 15 minutes.
Then knead the butter – flour mixture well and cover everything again and let it rest for another 15 minutes.
Finally, knead the fruit – almond mixture and let it cover for a final time for 15 minutes.
Then divide the dough and shape into an oblong roll and lash out a bit.
Fold a page a bit more like in the middle. Place the stollen on a baking tray that has been laid out with baking paper. Let it rest for another 30 minutes and then bake at 175 degrees for about 60 minutes. Take a swab sample. I bake my lugs in a baking frame (see photos) That works very well. But you can also tinker such a frame made of aluminum foil. This is then but not quite as stable as a baking frame.
After baking, allow the tuns to cool slightly on a wire rack. Melt the butter in a saucepan. Cut the vanilla pod and scratch it out and mix it with the powdered sugar.
Coat the lug well with butter from all sides, also at the bottom and dust with the icing sugar on all sides. Best with a powdered sugar sieve.

Let cool completely and wrap well twice in cling film and wrap as third layer in aluminum foil. Store cool storage.

RICH FRUIT CAKE (SLOW COOKER)
1 kg mixed fruit (and nuts if wanted)
750 ml fluid of your own choice (I used iced coffee)
2 cups self raising flour

Soak fruit in fluid of choice for 24 hours. Stir in flour and put into a loose bottom cake tin. Put in slow cooker and cook for 8 hours on low, with water halfway up cake tin. Cook using the tea towel trick in place. Cool and turn out.
Note: you can also use apple juice, orange juice and brandy.

MIKROGOLF VRUGTEKOEK MET PYNAPPEL
4 koppies koekvrugte
250 g dadels (versnipper)
125 g pynappel
100 g kersies (middeldeur gesny)
100 g versukerde suurlemoen lemoenskil
100 g neute
130 g botter
250 ml bruin suiker
125 ml brandewyn
125 ml water
440 ml koekmeel
5 ml koeksoda
2.5 ml bakpoeier
2.5 ml fyn gemmer
3 eiers geklits

Kook saam: Vrugte, suiker, botter, water en brandewyn vir 8 min teen 100% krag, roer 2 maal gedurede die kook.
Roer koeksoda by en laat staan om af te koel.
Sif droë bestanddele en voeg by gekitste eiers, meng dan by afgekoelde gekookte vrugte mengsel.
Gooi alles in ‘n bak uitgevoer met bakpapier.
Bak nou 20 min in mikrogolf op 70% krag.
Laat staan totdat goed afgekoel en keer uit op foeilie.
Draai toe in foelie en sit in lugdigte houer.
Verf/spuit OBS/brandewyn in koek goed elke 2de dag.

GIDEON EN RINIE SE VRUGTEKOEK
My vroulief het die heerlike vrugtekoek gebak. En djeerlik is dit beslis. Lekker niks droog nie.
4 koppies koekmengsel
2 ½ koppies suiker
4 koppies water
250 g botter
140 g kersies, elk in drie stukkies gesny
Voeg al die bestanddele in ‘n kastrol en kook op lae hitte vir 25 minute.
Voeg dan by:
2 teelepels koeksoda
2 koppies gekerfde dadels
En laat dit afkoel.

Voeg dan by dit :
4 koppies gesifte meelblom
2 teelepels bakpoeier
2 teelepels gemengde speserye
4 geklitste eiers
2 teelepels vanilla essens
½ koppie brandewyn

Meng goed na elke koppie meel wat bygevoeg word.
Voer ‘n broodpan uit met foelie en spuit met spray en cook.
Giet die mengsel in die pan en bak dit in ‘n voorverhitte oond op 140°C vir 3 ure.
Haal uit die oond en giet ‘n halwe koppie brandewyn oor die bodeel en laat staan vir 15 min.
Haal dan uit die pan en keer dit om en giet nog ‘n halwe koppie brandewyn oor die onderste deel.
Na n week se staan, as dit so lank hou, kan jy nog ‘n halwe koppie brandewyn oorgiet.
Vroulief draai dit goed toe in foelie en bêre in die yskas, dan kan dit baaie lank hou, gewoonlik word dit gou opgeëet.

SANDRA-ANN’S CHRISTMAS CAKE

SANDRA-ANN’S CHRISTMAS CAKE
500 grams of Cake Mix
100 grams of Butter
1 Cup of Sugar
1 Cup of Water
1  1/2 Teaspoons of Bicarbonate of Soda
Optional – add chopped cherries

Boil the above for 15 to 20 minutes.
Leave to cool
Sometimes I leave the above to even stand for two days in the pot.
Add to the above mixture
Two Eggs
Approximately a quarter cup of cooking oil.
Then I sift the below ingredients into the pot:
2 Cups of Self Raising Flour
1 Heaped teaspoon of baking powder.
Mix with a spatula
I grease a glass baking dish then line it with foil or wax paper.
Add the mixture into the baking dish.
Preheat oven for 15 minutes
Bake @ 160% for 1 hour and 20 minutes.

WHITE FRUIT CAKE

WHITE FRUIT CAKE
250 g butter
1 1/2 cup sugar
1 tsp vanila essence
4 eggs
1 cup cake flour
2 cups self raising flour
500 g cake fruit mix
2 dessert spoons oil,

Cream butter sugar and vanilla
Add eggs one at a time, beating well after each addition
Sift flours and add to creamed mixture
Add fruit cake mixture and pour oil onto fruit mixture
Mix well
Pour mixture into greased, lined loaf pan
Bake at 150’C for 1 1/2 hours or until skewer comes out clean

CANDLE FRUIT CAKE
200 gr Flour
200 gr Butter or Margarine
200 gr Brown sugar
4 Eggs
850 gr Fruit Mix (store bought)
Half teaspoon Cinnamon
Half teaspoon Nutmeg
Half teaspoon salt
5 ml Baking soda
3 ml Ginger

Cream butter and sugar
Add eggs one at a time
After each egg add 1 tablespoon of flour
Sieve in flour, spices and salt
Beat together with hand beater
Add fruit to batter
Mix well with wooden spoon
Grease baking tin and line sides with baking paper
Bake at 150/160 degrees Celsius for +/- one and a half hours
Leave to cool.
Feed with brandy or your choice of liquid.
Nota: resep wat ek in 5 blikkies gebak het. Ek het baked bean en pynappel blikkies gebruik

ELEANOR’S EASY CHRISTMAS CAKE
100 g butter
100 ml sugar
250 ml fruit cake mix
100 ml chopped cherries
100 ml almonds/pecans chopped
1 egg
2 ml vanilla essence
25 ml brandy
3/4 packet marie biscuits

Melt butter with sugar – add fruit mix, microwave on high for 5 minutes let cool. Stir in a beaten egg, vanilla, brandy, cherries & nuts. Add marie biscuits, spoon into a mould & refrigerate overnight.
Note from Lesdee: Hierdie jaar het ek besluit om individuele porsies te maak in plaas van een groot “koek”.

VRUGTEKOEK MET DADELS EN KERSIES
Smeer 2 ronde koekpanne(diep)
Kook saam: 1 pak vrugtekoek mengsel
1 pak dadels in stukkies gesny
200 gr kersies
2 t fyn gemmer
2 t fyn kaneel
2 t Vanilla
2 k suiker
2 k water
200 g margarine

Kook vir 5 minute.
Haal van stoof af en laat afkoel
Roer by 2 t koeksoda en 1/2 k gekapte neute
Roer 4 k bruismeel en 4 geklitste eiers by
Skep in gevoerde koekpanne en bak vir 2 ure in oond op 160 C.
Sodra afgekoel gooi brandewyn oor.
Draai toe in tinfoelie en laat staan.
