OUMA’S BRÖTCHEN – GERMAN BREAD ROLLS RECIPE (‘BREADSHINS’) – BREAD MAKER
For the dough
1¼ cups lukewarm water
2 egg whites
1 teaspoon salt
1½ teaspoons sugar
1 tablespoon soft butter
3½ cups all-purpose flour (more may be needed)
1 tablespoon yeast (active dry)
For the egg wash
1 egg white
2 tablespoons milk
Put all dough ingredients into bread maker (follow manufacturer’s recommended order). It may be kneaded by hand as well.
Set bread machine on “dough” setting. This will take about 1½ hours.
NOTE: after the first few minutes of the machine kneading the dough, check that the dough is not sticking to the sides of the bread machine and has formed a ‘ball’. If the dough is sticking, add a tablespoon of flour, let it knead and gradually add more if needed. The dough should come together without sticking to the pan. See the IMPORTANT note below the recipe.
When dough is ready, remove it from bread machine. Place dough on counter that is lightly dusted with flour and gently fold it several times.
Form into a roll, about 30 – 40 cm long and then cut into 12 sections.
Form each piece into a ball and place onto two lightly greased baking sheets. Cover and let rise until double in volume, about 45 minutes.
About 15 minutes before baking, pre-heat oven to 220 °C. Place an empty baking sheet on bottom rack.
When oven is hot, gently brush rolls with egg wash (mixing one egg white with two tablespoons milk). Cut a fairly deep slash in top of each roll with very sharp knife.
Place one cup of ice cubes on the hot baking sheet in oven just before placing baking sheets with rolls into oven.
Bake for about 18 – 20 minutes or until tops are nicely browned. Be careful when removing the rolls from the oven … there may be steam that escapes when you open door (from ice cubes).
Remove to rack and let cool for about ½ hour before serving.

Ek maak voor die tyd ‘n mengsel van 5 kg koek meel en 1 pakkie 350 g wheat bran.
3½ koppies gemengde meel
320 ml lou water
2 eetlepels bruinsuiker
3 eetlepels olie
1 pakkie pers gis
2 teelepels sout

Sit jou meelmengsel in die masjien.
Strooi dan sout bo-op.
Strooi suiker bo-op.
Sit olie bo-op.
Strooi gis heelbo en dan jou lou water.
Kies no 2 program op broodmasjien.
Dit bak minder as 2 ure en dan het jy ‘n heerlike bruin brood.

BROODMASJIEN MELKBROOD
Die melk brood met skaapwagter snye, ek brul van plesier.
2 koppies broodmeel
2 koppies koekmeel
4 eetlepel suiker
1 teelepel sout
2 koppies lou warm melk
4 eetlepel olie
10 g droëgis

Gooi eers die melk en olie in broodpannetjie.
Dan die droë bestanddele en laastens die gis.
Bak op basiese stelling 1-750 g stelling.

280 ml koue water
1 eetl suiker (15ml)
1 teel sout (5ml)
30 ml olie
3 kop koekmeel
1  1/2 teel gis

Plaas bestanddele in daardie volgorde in die broodmasjien se pan.
Sit op Basic en start.
Na 3 ure is daar ‘n heerlike vars brood.

Rosyntjiebrood:
280 ml koue water
3 eetl olie
3 kop meel
1 teel fyn kaneel
een derde kop suiker
1  1/2 teel sout
2  1/4 teel gis

Wanneer broodmasjien eerste keer “beep” voeg by 3/4  koppie rosyntjies.
As groterige rosyntjies halveer ek dit.
Ek voeg so ‘n teel mixed citrus peel by.
Koop nooit meer hot cross buns nie
Plaas bestanddele in daardie volgorde in die broodmasjien se pan.
Sit op Basic en start.

1 and 1/2 cups water
5 tablespoons sunflower oil
1 egg, beaten
3 cups all purpose flour ( white bread flour)
1 cup whole wheat flour
1 and 1/2 tablespoon sugar
2 teaspoons salt
2 teaspoons dry yeast
Mixed in my Russell Hobbs Breadmaker.
Form the vetkoek and let it stand to rise, bake in hot oil.

CHOCOLATE CAKE IN BREAD MAKER
* The key is to add the ingredients in the exact order that I list them.
1 1/4 cups milk (2% or whole)
125 ml butter, melted
2 large eggs
Add all of these ingredients into the bread pan, making sure that the melted butter, if hot, does not touch the raw eggs as it could scramble them.
1 teaspoon vanilla
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup cocoa powder
(the cocoa powder is an additional ingredient that I have added. At this time, you could also add a 2 tablespoons of raisins and omit the cocoa, or an additional 2 tablespoons chocolate chips. I have made it with blueberries, dried cranberries, changed up the vanilla for banana extract and put bits of banana…the possibilities are ENDLESS)
1 cup white sugar
2 cups all purpose flour
Place the pan into the bread machine and set it on Batter Bread.
Press start and close the lid.The machine does all the work for you. It mixes the batter and then bakes it too.

In 1 hour and 40 minutes you will be smelling yummy cake…..Remove the pan from the machine and place on a cooling rack for apx. 10 minutes.
Then, turn upside down and the cake should “pop” right out.Allow the cake to cool completely, or serve warm.
The kids like it served with a dollop of fresh whipped cream or powdered sugar.

*(it can be cooked in a greased loaf pan in the oven too, on 350 for 20 minutes. Then , if it isn’t cooked through, just add additional 5 minutes until toothpick inserted in center comes out clean)

700 g (1000 g) Measures in bracket is for an bread about 1000 g
Water 250 ml (350 ml)
Oil 2 TBSP (3 TBSP)
Salt 2TSP (2 ¼ TSP)
Wholewheat Flour 2 Cups (3 Cups)
Flour 1 Cup (1 1/3 Cups)
Brown Sugar 2 TBSP (2 ½ TBSP)
Milk Powder 2 TBSP (3 TBSP)
Yeast 1 TSP 1 TSP

Place ingredients into the bread pan. First add the water and/or liquids.
Then add the sugar, salt and flour.
Make a small indentation in the top of the flour and add the yeast into it.
Press menu button and select your desired program

Russell Hobbs breadmaker
400 gr strawberries trimmed
310 gr jam sugarbeikonfyt resep:
1 1/2 table spoon lemon juice
Chop fruit (large or smaller pieces)
Place in breadmaking machine pan with other ingredients.
Select jam option. Start machine.
Jam suiker kan vervang word met gewone suiker plus 1 teelepel pektienpoeier.
Moenie probeer om hoeveelheid te vermeerder.
Skep ook maar skuim af voor bottel.
Resultaat wonderlik. Laat weet asb hoe julle dit ervaar.

Biltong broodjie wat so 1.35 kg weeg…… Russel Hobbs masjien
so jy het n redelikke groot broodpan nodig of as jy masjien het sal hy presies inpas
Water: 650 ml
Botter: 4 eetlepes
Sout : 2.5 tee lepels sout
Wit brood meel : 5 en ‘n halwe koppies
Suiker : 3 eet lepels
Melkpoeier : 4 eet lepels
Kitsgis:  2 pakkies
2 eiers
1 koppie biltong.

Voeg eers al die nat bestanddele saam en dan al die droe bestandele bo op die nat bestandele sorg net dat die sout en kitsgis “yeast” nie aan mekaar raak tot in met wanneer brood geknie of in ‘n brood masjien geplaas word nie.
Bak vir so min of meer 45 min toets met ‘n toetspen.
Laat staan die deeg wat geknie is eers vir so 15 min in ‘n plek waar dit so 22 ºC is sodat dit kan rys..

Stel masjien op “quick”  die broodmasjien knie mos self so hy vat so 1 uur:15 minute om te bak maar as dit in ‘n oond is so 45 min op 150°C

TUISGEBAKTE BROOD EN HEERLIKE GROENTESOP
Dis ‘n broodmasjien resep:
380 ml water (kamer temperatuur is reg)
1 eetlepel olie
1 ½ eetlepel melkpoeier (ek’t cremora gebruik)
2 teelepels suiker
1 ½ teelepel sout
560 g witbrood meel (4 koppies)
7 g kitsgis

Weeg meel en sit een kant, begin masjien te pak soos gelys by bestanddele begin met water eindig met gis. Stel masjien op basic/white vir 1 kg brood

GROENTESOP
1 kg beesvleis – shin
1 pakkie soup mix
1 pakkie sop groente
2 beef blokkies
1 pakkie bruin uiesoppoeier
1 blikkie tamatiepuree
1 blikkie gekapte tamaties

Kook en braai shin met bietjie Zeal en speserye na smaak (Ek het ‘Flippen Lekka Spice’ gebruik)
Spoel soup mix onder water tot die water skoon uitloop. Gooi dan alles in pot en kook vir paar uur tot jy voel hy is gaar onthou om lekker baie sout en peper te gooi en genoeg water sodat hy nie te dik raak nie
