BANANA LOAF – BANANA  MUFFINS
Resep is ‘n  bietje aangepas: piesangs fyngemaak in voedsel verwerker, 3/4 koppie suiker ipv vol koppie, volkoring meel, en geen neute.

500 ml flour
10 ml baking powder
1 ml bicarbonate of soda
2 ml salt
5 ml ground cinnamon
125g butter
250 ml sugar
2 eggs
4 large, ripe bananas, mashed
125-250ml chopped nuts (optional)
2 ml vanilla

Sift flour with baking powder, bicarbonate of soda, salt and cinnamon.
Cream butter and sugar until light.
Add eggs, one at a time, beating well between additions and adding 5 ml of the flour mixture with each egg.
Add flour mixture to creamed mixture alternately with bananas, beating well until smooth. Stir in nuts and vanilla.
Pour into a lined and lightly oiled 26x9x7 cm loaf tin.
Smooth top and bake at 180°C in center of oven for 50 minutes or 1 hour.
Turn out, remove paper and cool. Serve sliced and buttered.
Or
Alternatively use muffin pan and bake for 20 minutes at 180°C.

MAYS BACON AND EGG PIE

MAYS BACON AND EGG PIE
250g chopped bacon,
6/8 eggs depending on the size dish you use,
1/2 green pepper chopped,
1/2 onion chopped and
1 tomato chopped,
mushroom to your liking,
about 1.5 cups grated cheese.
I just used bought puff pastry.
I spray my dish with spray and cook, then line it with the pastry, don’t roll out too thin, then I take the chopped bacon and make a cross on the pastry with it, so that there are four pockets for the whole eggs to go into. Over that I sprinkle the rest of the ingredients. Before the final layer of cheese goes on make sure u salt and pepper it lightly and use any other spice to your liking. Then put the grated cheese over all the ingredients cover with pastry, baste with egg wash and bake at 220deg C till brown. Serve hot or cold with a salad.
As it was too hot to eat tonight I just did some spare rib and baked beans with it. Hope you will enjoy my pie!

SEEKOS SLAAI

Het vanaand ‘n vinnige seekos slaai aanmekaar geslaan voor die krag vanaand om 18h00 afgegaan het!
Ek het 400gr mossels skoongemaak en vinnig in suurlemoen/knoffel botter gaar gemaak en eenkant gesit om koud te word. Toe 400gr calamari op selfde manier gaar gemaak en daarna 400gr garnale. Terwyl die seekos koud word het ek borde gepak met verskillende slaai blare (asian mix) en toe komkommer, klein tamaties en avokado peer opgesny en oor die blare gestrooi. Het toe in die middel van die bord ‘n lekker skep “basil pesto” roomkaas gesit en die seekos bo oor gestrooi. Het nog bietjie suurlemoensap en balsamic reduksie oorgesprinkel en toe lekker vars gemaalde peper en sout oorgestrooi. Ons het heerlik gesmul en wag nou vir die krag om weer aan te kom!
