Nog ‘n koue koue aand, maar het ‘n laaaang dag van skool gehad, en het nie krag vir pampoenkoekies. Dan is die resep altyd ‘n wenner-en die huis ruik na my ma se kos. ❤️
6-8 skywe pampoen met skil aan, en pitte
2 eetlepels olyfolie
sout en peper
gemengde speserye
vars roosmaryn
Meng alles saam en sprei uit oor bakplaat met bakpapier. Bak 20-30 minute by 200°C tot gaar. Bedien met pitte en al bo-oor.

MALVAPOEDING IN DIE KONVEKSIE/HALOGEEN-OONDJIE
45 ml (3 eetlepels) botter
250 ml suiker
1 eier
5 ml koeksoda
10 ml (2 teelepels) appelkooskonfyt
250 ml koekmeel
knippie sout
250 ml melk
Roer botter en suiker. Klits eier, koeksoda en konfyt by. Sif meel en sout en roer by bottermengsel.
Voeg melk geleidelik by en roer tot beslag glad is. Voorverhit die oondjie vir 5-10 minute. Bak in gesmeerde oondbak of individuele bakkies wat 3/4 vol geskep word, op 180°C vir 45 minute of tot ‘n toetspen skoon uitkom. Continue reading

STUFFED CABBAGE
½ cabbage, sliced in slices but not all the way through
200 g bacon cut into pieces
1 tin Koo chakalaka with corn
½ packet potato bake
300 ml milk
grated cheese
Fry bacon and chakalaka, add milk and potato bake. Add mixture in between slices, cover with cheese and bake at 150°C until required texture.

45 ml olive oil
2 onions, chopped
500 g butternut, cubed
4 cloves garlic, crushed
5 ml chilli paste
5 ml curry powder

CREAMY THYME AND LIME CHICKEN
CREAMY THYME AND LIME CHICKEN
8 chicken pieces, bone intact
fresh thyme
50 ml fresh lime juice
150 ml fresh cream
oil for browning chicken
pinch of Maldon sea salt
Heat a heavy based pan and pour just enough oil to spread over the bottom. Fry the skin side of chicken pieces until golden brown then sprinkle with salt and turn over. Once the other side is also browned, pour the lime juice over and add the fresh thyme to the pan. Put lid on and simmer until the chicken is cooked. Pour the fresh cream over and turn the heat up a bit until the cream starts bubbling. Check seasoning and serve with rice or boiled potatoes.
