QUICK AND EASY MUSHROOM SOUP
50 g butter
self raising flour, enough to make a very lumpy mixture
500 ml milk or cream, if you want it rich
additional milk, cream or water as required
3 ml garlic, finely chopped
5 ml salt
3 ml white pepper
250 g mushrooms, chopped or more as you require
1 cup grated cheddar cheese
HOMEMADE PATTIES BY CHANTEL
500 g mince (not lean)
1 cup grated cheese (I mixed Gouda and Tussers)
30 ml Jimmy Sauce
1 teaspoon coriander
½ teaspoon Spur salt
pepper to taste
dash of parsley
BACHELOR’S CHICKEN LIVERS
1 x 250 g tub chicken livers, cleaned and cut in half
1 onion, diced
1 teaspoon Italian herbs
1 flat teaspoon peri-peri or chilly powder
1 chicken stock cube, dissolved in a cup of hot water
1 tablespoon flour, dissolved in half cup water
Place all in a pan and bring to boil, then simmer for 15 minutes.

ALIDA’S CHICKEN LIVERS
Sautee and brown 2 onions cut into rings using a spoonful of butter.
Cut up either yellow or red pepper into strips and add to the onions.
Cup up 2 jalapeno peppers and add to onions.
Add a spoonful of garlic.
Clean and cut chicken livers into bite size pieces and add to onion mix.
Make sure the livers are cooked through (about 10 minutes, stirring often.
Add salt, black pepper and chilli spice.
Add a creamy hot sauce like prego or chilli sauce and stir into liver mixture.
Add 250 ml fresh cream and cook until the mixture have thickened slightly.
Serve with sliced and toasted ciabata bread.
You can also add chipotle spice or sauce

PHILLY CHEESE STEAK OMELETTE
A good way to use leftover steak.
230 g prego steak, sliced very thin
Green and red bell pepper, sliced
1 medium onion, sliced
½ cup cheddar cheese, shredded
salt and pepper
Slice the steak very thinly, cutting against the grain. This will make it more tender.
Brown the steak in a pan on medium high heat, adding salt and pepper to taste.

gekookte eiers, fyngedruk
tamatie en mosterd sous
Gooi tamatie sous en bietjie mosterd by fyngedrukte gekookte eiers.

Grease oven pan or two round tart foil plates
3 tablespoons margarine
1 cup castor sugar

½ t vanilla
¼ cup milk

150 ml of white wine
100 ml of olive oil
½ teaspoon of salt
250 g all purpose flour
1 teaspoon of baking powder (about 5 g)
150 g grated cheddar cheese
1 large onion
100 g bacon (rindless)
200 g ham, already cooked — sold as “ready to serve”
100 g black olives (seeds removed)
100 g green olives

KFC (AS CLOSE AS YOU’LL GET TO THE ORIGINAL)
2 cups maize meal
1.5 cups plain flour
4 teaspoons salt
4 teaspoons white pepper
6 teaspoons ‘Maggi’ chicken stock powder (*)
Mix all ingredients well.
4 whisked eggs. In a bowl.
As many chicken pieces as you like to use up the ingredients
(*) Maggi stock powder is no longer available in South Africa. Use any available or try cream of chicken soup powder.
