CREAMY AND COLORFUL COLESLAW
250 ml (1 cup) red cabbage, shredded
250 ml (1 cup) green cabbage, shredded
250 ml (1 cup) green apple, coarsely grated
¼ red onion, coarsely grated
60 ml (¼ cup) seedless raisin
60 ml (¼ cup) mayonnaise
5 ml (1 teaspoon) wholegrain mustard
5 ml (1 teaspoon) lemon juice
Combine all the salad ingredients in a large bowl.
Mix the mayonnaise, wholegrain mustard and lemon juice in a small bowl.
Pour the salad dressing over the salad ingredients.
Toss well and serve.
Serve as a side dish with braai or barbecued meat, with grilled chicken breasts or fish, or as a topping on burgers, tacos and pulled-pork sandwiches
