ANDY’S VEGETARIAN LENTIL SOUP
Andy’s delicious vegetarian lentil soup in under 30 min:
2 cups orange lentils
2 lt water
2 cups onion
1 green peper
1 teespoon ginger
1 teespoon curry powder
2 teespoon cumin
1 teespoon ground coriander seeds
1 teespoon mustard seeds
1 teespoon salt
Boil 2 cups orange lentils in about 2 litres of water in the microwave for about 15 minutes on high.
While lentils are cooking: fry two cut up onions, some garlic, a green pepper and 2 chillies in 3 T oil.
When soft add (These spices are optional. Use what you have.)
1 tablespoon ginger
1 tablespoon curry powder
2 teaspoon cumin
1 teaspoon ground coriander seeds
1 tablespoon mustard seeds
1 tablespoon salt
Stir fry for about 5 min.
Add a tin of tomato paste or 2 to 4 chopped up tomatoes. Cook for 2 min.
Add 1 to 2 cups boiling water and continue cooking until lentils are done.
Drain lentils slightly and add to tomato and onion mix.
Add the juice of a lemon or lime and serve.
Drizzle yogurt or cream over if you wish Delicious!
