2 cups cake flour
2 cups brown sugar
3/4 cup cocoa powder
2 tsp baking powder
1 and 1/2 tsp bicarb
1 tsp salt
1 tsp coffee granules
1 cup milk
1/2 cup oil
2 eggs
2 tsp vanilla essence
1 cup boiling water

In a large bowl place all dry ingredients and whisk for a few minutes to mix thoroughly.
In a separate bowl mix milk,oil, eggs and vanilla essence, whisk for 2 minutes.
Add the egg mixture to flour mixture and beat at slow speed for 1 minute, then high speed for 3 minutes. Add the boiling water and mix 1 minute, the batter will be very liquid, but that ensures a lovely moist cake. Divide mix between 2 x 20 cm cake pans and bake for 30 minutes at 180°C.
