TRADITIONAL FRUITY CHRISTMAS CAKE
12 eggs
500 g sugar
500 g butter/ margarien
5 ml molasses
2.5 ml nutmeg
2.5 ml mixed spice
625 g cake flour
5 ml baking powder
100-125 ml brandy
1.5 kg de oude brug cake mix (fruit &veg)
Preheat oven to 140°C.
Line cake tin with baking paper and spray sides with non stick spray.
In mixing bowl,, cream together sugar and butter until well blended. Beat eggs and add to the sugar and butter mixture, mixing well.
Sieve the flour and spices into the mixing bowl, add the de oude brug fruitcake mix, molasses and brandy and mix well.
Pour cake mix into tin and bake for 4 hours.
Decorate as desired.
