MARJ’S FRUIT LOAF
3 x Nutrific biscuits
200 gm muscovado sugar
200 gm xixed dried fruit
300 ml milk
1 jumbo egg beaten
225 gm self raising flour
Place the Nutrific biscuits, dried fruit & sugar in a large bowl. Pour in the milk, cover the bowl & leave to stand in a cool place overnight.
Grease a loaf tin, set oven to 180ºC
Add beaten egg and flour & mix well. Spoon into loaf tin and bake for 1hr. Leave in tin for 10 mins & turn out onto a rack to cool.
Lovely sliced and spread with butter. Freezes well.
