SARIE’S MICROWAVE FRUITCAKE
Fruit Cake ingredients
500gr fruit cake mix
1 cup brown sugar
1 packet of dates
1 cup of water (250ml)
1 tp bicarbonate of soda
1/4 cup of water (mix with bicarbonate of soda)
1 cup mix nuts (250ml)
250ml mixed glace cherries
1 to 2 tp ginger
1 tp mixed spice
2 table spoon apricot jam
2 lrg eggs
2 cups cake flour
Pinch of salt
Place quality wrap waxed paper at the bottom of the microwave cake bowl
Soak fruit overnight (250ml brandy, cake mix, glace cherries and nuts)
Boil fruit mix with 1 cup water, 250gr butter, 1 cup brown sugar and dates for 10 minutes plate heat 3.
Desolve carbonate of soda in 1/4 cup of water and add to warm fruit mix. leave to cool for 30min to 1 hour
Add mix spices, ginger,apricot jam, eggs beaten, and cake flour.
Mixed well together and bake on 100% in microwave for 25 minutes.
Cool off in cake pan and viola nice microwave fruit cake in only 25 minutes
