BANANA ICE CREAM
Slice about about 400 grams of Banana (per layer) and freeze until solid. (If you want to make strawberry, use about 250 grams of fresh strawberries and about 150 grams of banana and freeze)
When frozen solid, put it in your food processor and I added about 20 – 25 ml of Coconut Oil, about 100 ml of Coconut Milk and about 40 ml of Coconut Syrup.
Blitz this lot together – it will be noisy at first and then you are going to think that this is not going to work – Then it gets crumbly and THEN it gets creamy. Remember to clear the sides with a spatula to get everything blended and smooth. Pour into a dish and freeze.
For the Chocolate I added about 60 ml of cocoa but I suggest you taste test and add as much you think you would enjoy.
For the Vanilla I added 2 teaspoons of Vanilla Paste.
For the Strawberry I used about 100 grams of Banana and about 300 grams of fresh strawberries which I froze first with the banana slices.
Use this as a general guide – just make it how you like it.
