LOVELY BACON, CHEESE, TOMATO AND ONION QUICHE
125g ham or bacon, chopped
1 small onion, finely chopped
1 medium tomato, finely chopped
1 cup (120g) grated tasty cheese
1/4 cup (50g) self-raising flour
Salt & freshly ground pepper / peri-peri, to season
1 cup (200ml) milk
Today puff pastry or your own
Preheat oven to 200°C. Grease a 5 cup capacity pie dish (medium).
Fry bacon and onions until golden brown. Let it cool off.
Combine ham / bacon, onion, cheese, flour, salt and pepper in a medium bowl. Place unfrozen pastry in pie dish, making a couple of holes in the bottom with a fork.
Scatter pie filling over pastry in the base of the dish.
Whisk eggs and milk together in a jug and pour over ham mixture. Cook for about 35 minutes or until puffed and golden. Serve warm or cold.
