MAYS BACON AND EGG PIE
250g chopped bacon,
6/8 eggs depending on the size dish you use,
1/2 green pepper chopped,
1/2 onion chopped and
1 tomato chopped,
mushroom to your liking,
about 1.5 cups grated cheese.
I just used bought puff pastry.
I spray my dish with spray and cook, then line it with the pastry, don’t roll out too thin, then I take the chopped bacon and make a cross on the pastry with it, so that there are four pockets for the whole eggs to go into. Over that I sprinkle the rest of the ingredients. Before the final layer of cheese goes on make sure u salt and pepper it lightly and use any other spice to your liking. Then put the grated cheese over all the ingredients cover with pastry, baste with egg wash and bake at 220deg C till brown. Serve hot or cold with a salad.
As it was too hot to eat tonight I just did some spare rib and baked beans with it. Hope you will enjoy my pie!
