BEEF FILLET IN A POT
This is for a 1kg Beef Fillet not cooked in oven. Put in pot about 1/2cup oil and about 50gr butter add 4 cloves of whole garlic fresh Rosemary sprigs and fresh Sage leaves (to your taste) add your Fillet and braise it well turning it all the time on very hot plate
as the meat cooks add about 1/2 glass of dry white wine salt and pepper then make a mixture with 1/2 a chicken or beef stock I used chicken and hot water and don’t let the juices dry out but add a little chicken stock at a time. When you see the meat is braised well and not over cooked about 10 mins if you want it pink in the middle then leave it to rest, cook for longer if you want it well done. I then removed the meat from pot and let the juices thicken on stove without adding flour.
