HOME BAKED CHEESE CAKE WITH A DARK CHOCOLATE BASE
Preheat oven to 150degs C
Grease a small Pyrex bowl or a small loose bottom tin. You can line it with baking paper too.
1 cup crushed digestive biscuits
1/4 cup cocoa
2 tbsp sugar
1/4 cup melted butter
Mix all together in a bowl.
2 blocks of Philadelphia cream cheese (+- 500 grams)
1 tsp vanilla
2/3 cup sour cream
Beat cream cheese till soft. Gradually add the sugar and keep on beating, scrape the sides of the bowl.
Add the eggs one at a time.
Add the vanilla.
Add the sour cream
Beat till it’s soft and silky.
Pour over the base and bake at 150 C for one hour, leave in the oven for another hour and then pop it in the fridge.
The juice from 1 tin of stoned black cherries
2 tbsp strawberry jam
4 tbsp lemon juice
Cook this mixture on low heat till the jam has melted. Cut a few cherries in half and add to the mixture. The more you reduce the mixture on the stove the thicker it will get.
Refrigerate when it is at your desired consistency.
Spoon over the cake and enjoy.
