EASY APRICOT CHUTNEY
Busy making my own
5 kg apricots
8 big onions
8 red chillies crushed
2 litre brown vinegar
2 kg brown sugar**
1 tablespoon salt
1 tablespoon coriander
De pip the apricots.
Grate apricots and onions in food processor
mix all together
Cook till nice brown, +- 1hour to 1 1/2 hours
Bottle and leave to ripen for about a week.
Add or subtract chillies to taste
I have chutney that is a year old in canned bottles. Longer the better the taste
