SEARED SALMON WITH CUCUMBER GINGER AND CHILLI

Ek het ‘n jaar of 2 gelede ‘n reeks klasse bygewoon by Seawork SA om oor my vrees te kom wat vis gaarmaak betref. Een van my gunsteling resepte van daardie tyd was hiervoor.

Ek het die bestandele egter so effens aangepas na smaak en gebruik dit gereeld wanneer ek vis gaarmaak :

3 E soja sous
3 E Rice wine vinegar
15 ml gerasperde vars gemmer
15 ml suiker
30 ml gekapte vars pietersielie
gekapte chilli na smaak

Gooi in botteltjie met deksel en skud tot goed gemeng.

Ek braai my vis porsie net om te seël, gooi dan hierdie mengseltjie oor en sit in warm oond om deur gaar te word. Dit is njammies. Ek maak gewoonlik 2 of 3 X die hoeveelheid en los in yskas vir die volgende keer. Ek gooi dit ook oor roerbraai groente.

My man eet gladnie komkommer nie en ek eet gladnie koljander blare nie, so daardie items is van die oorspronklike resep verwyder.

Hier is die oorspronklike resep :

Seared Salmon with Cucumbe. Ginger and Chilli

SERVES: 4
Ingredients: 4x 200g portion of Norwegian Salmon
3 tblsp of light soy sauce
3 tblsp of rice vinegar
2 medium sized cucumbers
15ml grated ginger
15ml of sugar
30ml of coarsely chopped coriander

METHOD:

– Heat a pan with a drizzle of olive oil, when the pan is hot place the

Fillets skin side down for 3min and do the same with the skinless side.

– Remove from pan and place in a oven tray and in the oven roast at 220°C

For 8 min.

– Meanwhile peal your cucumbers and deseed, cut into 1cm thick slices
– Place the rest of the ingredients into a mixing bowl and whisk to combine.
– Lastly remove salmon from oven and flake, add cucumber and dressing and
place on a plate.
