500 ml sugar
1 tsp vanilla
350 ml oil
350 ml plain yoghurt not low fat
900 ml self raising flour (replace some with cocoa for chocolate cake)
beat eggs and sugar together. Add vanilla, oil and yoghurt. Fold in flour, don’t mix too much.
1 cup brown sugar
4 tbsp flour
4 – 10 ml cinnamon
5 – 8 tsp coffee powder
4 tbsp melted butter
1 – 2 cups of nuts
mix together all the ingredients.
Assembling the cake
Pour 3/4 of the cake mixture into bottom of 2 ring pans or muffin tins. Sprinkle coffee mixture
over and pour over remainder of dough. Bake at 180C for 40 min or 20 – 25 mins for muffin tins.
