SOUR MILK OATMEAL MUFFINS
Soak 1 cup oatmeal and 1 cup buttermilk or sour milk for 10 to 15 minutes.
Add 1 egg and 1/2 cup brown sugar and mix well.
Prepare flour mixture of
1 cup flour,
1/2 teaspoon salt,
1 teaspoon baking powder and
1/2 teaspoon baking soda.
Add to oatmeal mixture and mix until flour is wet.
Mix in 1/3 cup oil.
Spray 12 muffin cups with Pam/Spray & Cook
Fill with batter.
Bake at 400 degrees for 20 minutes. (200 degrees C)
