BROCCOLI SALAD
Oil for frying
1 onion, chopped finely
250 g bacon, in blocks
1 large broccoli, broken into small flowers
125ml (1/2 cup) cheddar cheese, grated
200g mixed nuts, chopped finely
250 ml mayonnaise (my mom mixed ¾ cup mayo with ¼ cup plain yogurt)
30 ml (2e) white vinegar
30 ml (2e) sugar
salt en pepper
Heat the oil in a pan and fry the onion and bacon till crispy
Mix the rest of the ingredients en season with sugar, salt & pepper to taste
Place in the fridge until you serve.
TIP
Replace the Cheddar cheese with feta or blue cheese
