FISH OR CHICKEN MINCE CAKES

FISH OR CHICKEN MINCE CAKES
½ – 1 Hake
onion
pesto and mozzarella crisps, Lays
inside of tomato (see instructions)
spices to taste
1 – 2 eggs to combine (Careful it’s not too soft)
brown sugar

Mince hake and onion, or just pulse.
Crush crisps fine and add to fish.
Take a large tomato and carefully slice it like a flower.
Gently scoop out inside and add to fish-mix, together with spices and egg.
Make into balls the size of the inside of your flower.
Fry till golden brown and crisp on the outside.
Put your first fishball in the flower, add some caramelised onion.
Stack the second fishball and finish off with caramelised onion on top.
Caramelised onion:
Slice onion finely, cook in a tiny bit of water till just soft, add brown sugar to taste.
Not too much, you do not want toffee.
